Sweet Potato Dream

A sweet potato stuffed cookie with vegan marshmallows. We understand that everybody might not like pork on their fork, so we use vegan marshmallows. The sweet potato gives the cookie a cake like texture while the marshmallow gives it a nice gooey flavor. Let's not forget the notes of cinnamon and nutmeg that gives the cookie more fall flavor.
