Sweet Potato Pecan Dream

A sweet potato stuffed cookie with vegan marshmallows with crushed pecans throughout. We understand that everybody might not like pork on their fork, so we use vegan marshmallows. The sweet potato gives the cookie a cake like texture while the marshmallow gives it a nice gooey flavor. Let's not forget the notes of cinnamon and nutmeg that gives the cookie more fall flavor.
